Food Network features a recipe for potato croquettes that calls for frying potatoes mixed with eggs, ham, milk, flour and bread crumbs seasoned with salt, freshly ground pepper and Parmesan cheese. The recipe makes four to six servings and requires 45 minutes of preparation and 20 minutes of cooking time.
Peel 3 pounds of potatoes, and cut them into small cubes. Boil the cubes until they are cooked through, and allow them to cool. Put the potatoes through a food mill into a bowl, and stir in 4 eggs, 1/2 cup of cooked ham and 1 cup of freshly grated Parmesan cheese. Add salt and pepper to taste, and mix well. Pour 1 cup of cake flour onto a plate, 1 cup of breadcrumbs onto a separate plate, and whisk together 1/2 cup of milk with 2 eggs. Pour this mixture onto a third plate.
Cover your hands with flour, and form the potato mixture into balls the size of eggs. Dredge the balls in the flour, then the milk-and-egg mixture, then the breadcrumbs. Heat between 4 and 6 inches of vegetable oil in a 6-inch deep saucepan to 375 degrees Fahrenheit. Place five of the potato croquettes in the oil, and fry them until they appear golden brown. Repeat the process until all of the croquettes are cooked. Drain each batch of potato croquettes on paper towels prior to serving.
