Stir in 1 cup of shredded cheddar cheese, add 1/4 cup of diced onion and season the mixture with salt and pepper to taste. Pour the potato mixture into a 9"x13" baking dish and bake the casserole for 1 hour at 350 degrees Fahrenheit.
To make an easy sweet potato pie with a pecan topping, combine 3 cups of mashed sweet potatoes, 1 cup of brown sugar and 1/2 cup of melted butter in a mixing bowl. Add two lightly beaten eggs, 1/2 cup of milk and 1 teaspoon of vanilla, blending the mixture thoroughly. Pour the potatoes into a buttered 1.5-to-2-quart casserole dish.
For the topping, mix together 1/3 cup of melted butter, 1/2 cup of brown sugar, 1/3 cup of flour and 1 cup of chopped pecans. Sprinkle the topping over the sweet potatoes and bake the casserole at 350 degrees Fahrenheit for 30 to 40 minutes. This casserole serves six to eight people.
