AllRecipes.com and Food.com both publish pineapple stuffing recipes. The AllRecipes.com version has just five ingredients and is easy to make. Food.com’s recipe incorporates pineapple with pork sausage and celery for a different twist on a classic dish.
To make the pineapple stuffing from AllRecipes.com, preheat an oven to 350 F, and grease a 9-inch baking pan. Cream 1/2 cup margarine and 1 cup white sugar in a mixing bowl, and then beat in 4 eggs, adding them one at a time. Add 1 20-ounce can of drained crushed pineapple and 5 slices of bread, cubed. Add the mixture to the baking pan, and bake for an hour. Allow the stuffing to sit for a few minutes prior to serving.
To make the Food.com recipe, heat an oven to 350 F, and then cook 12 ounces pork sausage in a skillet over medium-high heat until brown. Drain the sausage, and set aside.
In a second skillet, melt 1 cup of butter or margarine, and then stir in 1 1/2 cups finely chopped celery, 1 cup chopped onion and 3 to 4 cloves of freshly minced garlic. Cook the mixture for about 10 minutes or until tender. Tear 8 slices of fresh white bread into small pieces, and mix all ingredients.
Add 1 1/2 cups finely chopped pineapple, 1 cup dried cranberries, 1 1/4 cups chopped toasted pecans, 1/3 cup fresh parsley, 1 teaspoon crushed dried oregano, 1 teaspoon sage, and salt and pepper to taste. Bake for 30 to 35 minutes.
