To make Kraft's Philadelphia Classic Cheesecake, start by mixing together 1 1/2 cups graham cracker crumbs, 3 tablespoons sugar and 1/3 cup melted butter. Press the graham cracker crust into a 9-inch springform pan. Combine 4 packages softened Philadelphia Cream Cheese, 1 cup sugar and 1 teaspoon vanilla. Add in 4 eggs, one at a time, then pour the cheesecake mixture on top of the crust. Bake the cheesecake for 55 minutes at 325 degrees Fahrenheit.
For a cheesecake using ricotta cheese instead of cream cheese, start by mixing together 1 cup graham cracker crumbs, 3 tablespoons melted butter and 2 tablespoons sugar. Press the crust into the bottom of a 9-inch spring-form pan. Beat together 4 cups ricotta cheese, 1 1/4 cups sugar and 1/4 cup flour, then add in 1/2 cup whipping cream, 2 teaspoons vanilla and 1 teaspoon lemon zest. Mix in 5 eggs, one at a time, then pour the cheesecake mixture over the crust. Bake for an hour and 20 minutes at 350 degrees Fahrenheit.
