A recipe for pecan cheesecake bars is Double Caramel-Pecan Cheesecake Bars from Kraft, which calls for graham crackers, cream cheese, pecans, sour cream and caramels. Another good recipe is Pecan Cheesecake Bars, which uses a pecan and flour crust and crumble, and a cream cheese filling.
To make Double Caramel-Pecan Cheesecake Bars, mix together 1 1/2 cups of graham cracker crumbs, 2 tablespoons of granulated sugar, 1/2 cup of coarsely chopped pecans and 1/4 cup of melted butter, and press the mixture into the bottom of a foil-lined baking pan. While the crust bakes at 350 degrees Fahrenheit for 10 minutes, cream together 4 8-ounce packages of softened cream cheese, 1 cup of brown sugar and 2 tablespoons of flour. Mix in 1/2 cup of sour cream, 1 tablespoon of vanilla and 3 eggs, one ingredient at a time.
Melt 36 caramels with 1 tablespoons of water, and fold it into the cream cheese mixture. Spoon the filling into the crust, and bake it for 40 minutes. Once the cheesecake completely sets up, drizzle it with 14 caramels melted with 1 tablespoon of water and 1/2 cup of chopped pecans.
Make Pecan Cheesecake bars by whisking together 1 cup of flour, 1/3 cup of brown sugar, 1/2 cup of chopped pecans and 1/3 cup of softened butter. Press all but 3/4 cup of the crust into the bottom of a baking pan, and bake it at 350 F for 12 minutes. Beat together 1 8-ounce package of softened cream cheese, 1/4 cup of sugar, 1/4 cup of milk and 1 teaspoon of vanilla, and pour it over the crust. Top the cheesecake with the rest of the crumb crust, and bake it for 30 to 40 more minutes.
