Add 8 ounces of room-temperature cream cheese, 3/4 cup of confectioner's sugar and 3/4 cup of creamy peanut butter to a large bowl. Cream the mixture using a stand- or hand-mixer until light and fluffy. In another bowl, whip 1 cup of heavy whipping cream until thick. Add 2 tablespoons of confectioner's sugar and 1 teaspoon of vanilla extract, and whip until stiff peaks hold their shape. Fold the whipped cream mixture into the peanut butter mixture, and pour it into a 9-inch chocolate-cookie pie crust. Sprinkle 2 ounces of shaved milk chocolate over the pie, and place the pie in a freezer for four hours before serving.
To make a hot fudge sauce for the pie, combine 1/3 cup of heavy whipping cream, 1/4 cup of light brown sugar, 1/4 cup of light corn syrup, 2 tablespoons of unsweetened cocoa powder and 1/8 teaspoon of salt with 2 teaspoons of vanilla extract in a large sauce pan over medium heat. Reduce heat to low, and add 4 ounces of finely chopped semi-sweet chocolate. Stir until the chocolate melts and the mixture thickens.
