To make Alton Brown's peanut butter fudge, blend 8 ounces of unsalted butter with 1 cup of smooth peanut butter in a 4-quart microwave-safe bowl. Cover the bowl with plastic wrap, and microwave it on high for 2 minutes. Stir the butter and peanut butter mixture, then re-cover the bowl, and microwave for 2 more minutes. Add 1 teaspoon of vanilla extract and 1 pound of powdered sugar to the peanut butter mixture, and stir it with a wooden spoon until all of the ingredients are well combined. When the mixture starts to get hard and loses its shiny appearance, spread it into a buttered 8-inch-by-8-inch pan lined with parchment paper.
