Start by combining 1 1/2 cups of Jif Creamy Peanut Butter with 1/2 cup of softened butter, 1 teaspoon of vanilla extract and 1/2 teaspoon of salt in a large bowl. Beat the mixture with an electric mixer on low speed until fully blended. Add 2 cups of powdered sugar to the peanut butter mixture and continue beating until fully blended. Beat in additional powdered sugar until the mixture stays on a toothpick when rolled into a ball. Take small scoops of the mixture, shape them into 1-inch balls, place them on a tray and refrigerate.
Put 2 cups of semi-sweet chocolate chips into a microwave-safe bowl along with 2 tablespoons of Crisco All-Vegetable Shortening. Microwave for 30 seconds on medium before stirring and repeating until the mixture is smooth.
Remove the peanut butter balls from the refrigerator and stick them with toothpicks. Dip each peanut butter ball 3/4 of the way into the chocolate mixture, leaving the top of the peanut butter ball exposed to resemble a buckeye. Remove excess chocolate and place the balls on a tray lined with wax paper. Reheat the chocolate mixture as necessary during the dipping process. Remove the toothpicks, smooth over the holes and refrigerate the buckeyes until firm.
