To make Paula Deen’s chicken salad, combine 1 cup mayonnaise, 1 stalk of finely chopped celery, 2 tablespoons finely chopped red onion, the juice of 1/2 of a lemon and 2 teaspoons of curry powder in a large mixing bowl.
Remove the skin and pick the meat from a 3-pound roasted chicken. Fold the chicken, 2 cups of halved seedless red grapes and ½ cup of chopped roasted and salted almonds into the mayonnaise mixture. Season the salad to taste with kosher salt and black pepper. Serve the chicken salad on whole wheat bread with slices of tomato and lettuce, if desired.
To make Food Network’s hot chicken salad recipe from Paula Deen, preheat an oven to 350 degrees F, and spray a 13-inch by 9-inch baking dish with vegetables cooking spray. Mix 2 cups of cubed cooked chicken breast meat with 1 cup diced celery, 1/2 cup of slivered almonds, 1/2 teaspoon each salt and pepper and 2 tablespoons fresh lemon juice. Add 1 cup each mayonnaise and grated sharp cheddar cheese. Fold the mixture into the prepared pan, and then top with 2/3 cup of crushed potato chips. Bake for 20 minutes.
