Grandpa Fritz's turkey is a recipe for the Orion Cooker. The recipe takes advantage of several Orion Cooker features, including faster cooking time, the poultry rack and the smoker.
Start the recipe with a 12-to 20-pound turkey. Cut 1 stick of butter into 4 or 5 pieces, and after cutting slits through the skin on the breast and legs, insert the butter pieces under the skin. Make a rub by combining 1 teaspoon of celery salt, 1 teaspoon of mustard powder, and salt and pepper to taste. Rub the mixture on the outside of the turkey, and rub 1 teaspoon of paprika around the inside of the turkey's cavity.
Combine 1/4 cup of olive oil, 1/4 cup of lemon juice, 1/4 cup of balsamic vinegar and 1 teaspoon of Tabasco sauce in a small mixing bowl, and add salt and pepper to taste. Inject all of the mixture into the breast and thighs with a turkey injector.
Place the turkey on the poultry stand, and lower it onto the bottom grate of the Orion Cooker using the lifting handle. Fire up the cooker, and cook until the internal temperature of the breast reaches 165 degrees Fahrenheit and the drumsticks read 180 degrees using a meat thermometer. Add applewood chips to the cooker to enhance the sweet smoky flavor and to make the skin crispier.
