O'Charley's restaurant, which is well-known for its ooey gooey caramel pie, has a recipe that calls for chocolate chips, whipped cream and pecans. The pie is rich in flavor and provides nine servings.
To make O'Charley's ooey gooey caramel pie, combine 36 unwrapped caramels in a medium saucepan with 1/4 cup butter or margarine and 1/4 cup milk. Cook over low heat. Stir frequently until the mixture is smooth; remove from heat.
In a large bowl, mix together 3 eggs, 3/4 cup brown sugar, 1/2 teaspoon vanilla extract and 1/4 teaspoon salt. Slowly add the caramel mixture. Stir until completed blended. Pour the mixture into a 10-inch graham cracker pie shell, and bake at 350 degrees Fahrenheit for 45 minutes. Refrigerate.
Immediately before serving, place a single layer of whipped cream over each pie slice. If this step is completed too soon, the whipped topping melts before it is needed.
In small bowls, place 2 tablespoons mini chocolate chips and 2 tablespoons pecan chips. Sprinkle both treats over the whipped topping layer evenly and sparingly.
Wrap segments of aluminum foil around the edge of the pie in order to slow down the browning during baking. This technique can be used to prevent the crust from becoming too dark.
