To make okra gumbo soup, sprinkle 2 pounds of sliced okra with salt, black pepper and cayenne pepper to taste, and fry it in 1/4 cup of vegetable oil heated to medium. After 12 minutes, stir in 2 cups of chopped onions, 1 cup of chopped celery, 1 cup of chopped green bell peppers and 1/2 cup of seeded and chopped tomatoes, and season the vegetables with salt and cayenne pepper. Cook the mixture for 20 minutes, and then add 2 tablespoons of chopped garlic and 3 bay leaves.
Sprinkle 1/2 pound of firm flesh fish, 1/2 pound of peeled and deveined shrimp, 1 pound of crawfish tails and 1/2 pound of lump crabmeat with the prepared essence Creole seasoning. Add the fish to the vegetable mixture before adding in 2 quarts of fish stock and the rest of the seafood.
