Cook the mixture for 20 minutes, and then add 2 tablespoons of chopped garlic and 3 bay leaves.
Sprinkle 1/2 pound of firm flesh fish, 1/2 pound of peeled and deveined shrimp, 1 pound of crawfish tails and 1/2 pound of lump crabmeat with the prepared essence Creole seasoning. Add the fish to the vegetable mixture before adding in 2 quarts of fish stock and the rest of the seafood.
