Nitza Villapol's recipe for Picadillo from her book "Cocina Al Minuto" is republished at Guije.com. The recipe calls for onion, pepper, garlic, ground beef, pork and ham. It also calls for capers or olives, raisins, ketchup or tomato sauce and wine. It is seasoned with salt, Ac'cent and black pepper.
Heat 1/4 cup of oil in a pan and sauté 1 chopped medium onion, 1 chopped large green bell pepper and 1 crushed clove of garlic until the onion appears translucent. Add 1/2 pound of ground beef, 1/2 pound of lean ground pork and 1/4 pound of ground ham to the pan along with raisins to taste. Cook over medium heat until the meat loses its pink color, stirring to prevent the ingredients from sticking to the pan. Add 1/4 cup of dry cooking wine to the pan and simmer for a few minutes before adding 3/4 cup of capers or olives and 1/2 cup of tomato sauce or ketchup. Season with 1 teaspoon of salt, 1 teaspoon of Ac'cent flavor enhancer and 1/8 teaspoon of black pepper.
Continue to cook over medium heat while stirring for about 15 to 20 more minutes. Serve over white rice. The recipe makes 6 servings.
