To prepare Mississippi cheese straws, begin by gathering 6 ounces of sharp cheddar cheese, 3/4 cup of flour, 1/4 cup of butter and 1 tablespoon of heavy cream. Also, gather 1 teaspoon of salt and 1/2 teaspoon of cayenne pepper if you want to make cheese straws with a sharper flavor.
Prepare a food processor and a food scale to measure the cheese. Weigh the cheese on the food scale, and then grate it into the processor.
