Pampered Chef's Dutch Apple Mini Tarts and Food Network's Individual Apple Tarts are recipes for mini apple tarts. The first recipe makes 24 servings and the second recipe makes eight.
For the Dutch Apple Mini Tarts, preheat the oven to 375 F. On a lightly floured surface, roll one layer from a packaged pie crust into a 12-by-10-inch rectangle. Cut out 12 circles and press them into a mini muffin pan. Repeat with the remaining layers.
For the apple filling, whisk 4 ounces of softened cream cheese until smooth. Mix in 1/4 cup of brown sugar until fluffy. Mix in 1 egg and then add 2 tablespoons of flour and 1/2 teaspoon of ground cinnamon. Peel, slice and chop 3 apples, and stir them into the mixture. Heap this into the muffin cups.
Top the apples with a combined 3 tablespoons of brown sugar and 3 tablespoons of flour. Top that with 2 tablespoons of coarse butter crumbs. Bake for 20 minutes.
For the Individual Apple Tarts, cut out 4-inch disks of thinly rolled out puff pastry. Slice the peeled, halved and cored apples extremely thinly. Mix 1/4 teaspoon cinnamon and 1/2 cup of sugar in a bowl. Cut 4 tablespoons of butter into 16 cubes.
Place the pastry disks on a parchment-lined sheet pan, topping each with a butter cube and a spoonful of cinnamon sugar. Stack the apple slices in shrinking concentric circles. Place another cube of butter and more cinnamon sugar on top. Bake for 30 minutes.
