A quick and easy Mexican bunuelos recipe requires only flour tortillas, cinnamon, sugar and cooking oil. The tortillas, either whole or cut into parts, are fried in the oil and then coated with the cinnamon and sugar.
To make bunuelos from six 8-inch tortillas requires 1/2 cup of sugar and 1 teaspoon of cinnamon. Some recipes include 1/4 teaspoon of nutmeg in the sugar and cinnamon mix. Mix the sugar and cinnamon on a plate, spreading the mixture over an area larger than the tortillas. Fill a pan with cooking oil until it is deep enough to submerse the tortillas. Heat the oil to between 350 and 375 degrees Fahrenheit. If you do not have a thermometer, test the oil by adding a piece of tortilla, which should sizzle and brown in two to three minutes.
Once the oil is ready, fry the tortillas one at a time, either whole or in parts, until they are golden brown. Remove each tortilla from the pan, and drain the excess oil onto a paper towel. While still warm, coat the tortilla with the sugar and cinnamon mix by setting it flat on the mixture one side at a time. The bunuelos can be served warm or made in advance and stored in an airtight container.
