Food Network and Taste of Home both provide recipes for mandarin orange and spinach salad recipes. Each recipe varies slightly. One includes only baby spinach, and the other includes chopped spinach and romaine lettuce.
The Food Network recipe includes 8 ounces of baby spinach, 1 cup of drained mandarin oranges, 1/2 cup of chopped red onions and 1 tablespoon of orange marmalade. Also add 2 tablespoons of red wine vinegar, 1/3 cup of extra-virgin olive oil, and salt and pepper for taste.
Put the spinach leaves on a large platter. Top them with the mandarin orange sections and the chopped red onions. Whisk together marmalade and vinegar until it is blended. Add the oil into the dressing while continuing to whisk it. Pour the dressing over the salad, and season it with salt and pepper before serving it.
The Taste of Home recipe requires preparing the dressing in advance. Combine 1/2 cup of vegetable oil, 1/3 cup of sugar, 1/3 cup of white vinegar, 2 tablespoons of minced parsley and 3/4 teaspoon of salt.
For the salad, combine 3/4 cup of slivered almonds, 4 1/2 teaspoons of sugar, 7 cups of torn romaine lettuce, 7 cups of chopped fresh spinach and 1 1/2 cups sliced celery. Also add 1 1/2 cups of sliced green onions and 3 cans of drained mandarin oranges. Add the dressing over the salad to create the desired taste.
