The KraftRecipes.com features a recipe for a mandarin orange Jell-O dessert called the Mandarin Mousse Mold. This desert features orange gelatin, whipped topping and layers of mandarin oranges.
Begin by emptying a 6-ounce package of Jell-O orange flavor gelatin into a large bowl. Add 1 1/2 cups of boiling water, and stir for about two minutes until the gelatin and water are well combined. Once the Jell-O completely dissolves, stir in 1 cup of cold water. Prepare a 6-cup mold. Open an 11-ounce can of mandarin oranges, and drain them completely. Spread the mandarin oranges evenly around the bottom of the mold, and cover with 2 cups of the prepared orange flavor Jell-O. Move the mold to the refrigerator, and allow the gelatin to rest until it sets. The gelatin should not be firm, but should not stick to your finger when poked.
Refrigerate the remaining Jell-O in a separate vessel for about 30 minutes, or until just set. Add 2 cups of thawed Cool Whip to the bowl, and whisk until Jell-O and Cool Whip are well combined. Once the mixture is well blended, spoon it over the mandarin orange and Jell-O layer in the mold. Spread evenly, and refrigerate for 4 hours, or until set. Serve topped with Cool Whip.
