A good hog head cheese recipe made in the Cajun tradition includes hog's head, pig's foot, onions and various seasonings. If hog's head is unavailable, another type of pork meat is an acceptable substitute. Hog head, or souse, can be purchased at some Chinese or Hispanic food markets.
The first step in making homemade hog head cheese is cleaning the hog head by removing its eyes, ears and brains, and sawing the head into pieces. Add 10 cups of water to a large pot, and place the hog head into the pot, along with the pig foot, and a teaspoon of salt. Cook the meat until it is tender, and the liquid in the pot is reduced to 3 cups.
Chop 3/14 pound of onions, and one green onion, adding them to the pot along with seasonings such as celery flakes, parsley flakes and red pepper. Continue cooking the meat mixture for several minutes. Remove the meat from the pot, remove the meat from the bones, and place it into a food processor, pulsing until it is finely chopped, but not pureed. Return the chopped meat to the pot, and pour the entire mixture into a baking pan. Chill the hog head mixture in the refrigerator until it becomes firm, at which time it is ready to serve.
