Bison Burgers with Garlic Mayo and Caramelized Onions

Combine the meats with the parsley and minced onion and garlic, as well as the onion powder, garlic powder, salt, ketchup, Worcestershire sauce and black pepper. Divide into four burger patties. Set aside.
Heat the bacon fat or olive oil over medium-high and cook the onions, stirring with a little salt for up to 10 minutes, or until dark brown and caramelized. Use a tiny amount of water if the onions stick to the pan and continue to stir. Set aside.
Combine the mayonnaise, parsley and chopped garlic with a little salt and pepper.
Heat olive oil in the skillet and add the burger patties. Cook for about 3 minutes on both sides, then top each with a slice of the Cheddar. Spread the bottom halves of the burger buns with the garlic mayo and add the cooked patties. Follow with the onions and arugula, then finish with the top half of the buns.
