  • 1 pound ground bison
  • 1 pound ground beef sirloin
  • 1 yellow onion, minced
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon seasoning salt
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • Freshly ground black pepper
  • Kosher salt
  • Olive oil
  • 2 tablespoons bacon fat (or olive oil)
  • 1 yellow onion, sliced thin
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh parsley
  • 4 cloves raw garlic, chopped
  • 4 slices Wisconsin Cheddar cheese
  • 4 burger buns
  • 1 cup fresh arugula
  1. Prepare burger patties
  2. Combine the meats with the parsley and minced onion and garlic, as well as the onion powder, garlic powder, salt, ketchup, Worcestershire sauce and black pepper. Divide into four burger patties. Set aside.

  3. Prepare caramelized onions
  4. Heat the bacon fat or olive oil over medium-high and cook the onions, stirring with a little salt for up to 10 minutes, or until dark brown and caramelized. Use a tiny amount of water if the onions stick to the pan and continue to stir. Set aside.

  5. Prepare garlic mayonnaise
  6. Combine the mayonnaise, parsley and chopped garlic with a little salt and pepper.

  7. Cook burgers and assemble
  8. Heat olive oil in the skillet and add the burger patties. Cook for about 3 minutes on both sides, then top each with a slice of the Cheddar. Spread the bottom halves of the burger buns with the garlic mayo and add the cooked patties. Follow with the onions and arugula, then finish with the top half of the buns.
