To make a lemon pound cake, mix flour, baking soda and salt in a bowl, and cream butter in a separate bowl. Add eggs, sugar and vanilla to the butter, and mix the dry ingredients and lemon juice into the butter mixture. Bake at 350 degrees Fahrenheit for 65 minutes.
Preheat the oven to 350 degrees Fahrenheit, and prepare a loaf pan by buttering the sides and bottom. Line the pan with parchment or waxed paper. Set the pan aside. In a large bowl, combine 1 1/2 cups of all-purpose flour, 1 teaspoon baking powder and 1/2 teaspoon of salt. In a separate bowl, cream one stick of butter, and add 1 cup of sugar to the butter. Blend the butter and sugar well.
Incorporate four eggs into the butter mixture, one egg at a time. After the eggs are incorporated into the mixture, add 2 teaspoons of vanilla extract, and blend the mixture with a hand mixer. Slowly incorporate the dry ingredients and 1/4 cup of lemon juice to the butter mixture by adding a small amount of dry ingredients, and then adding a small amount of the lemon juice to the mixture.
Mix well after each addition, and continue until all the ingredients are combined. Pour the combined ingredients into the loaf pan, and bake the pound cake at 350 degrees Fahrenheit for 65 to 75 minutes.
