In a pan over medium-high heat, saut�� 1 sliced onion and 2 smashed garlic cloves in 3 tablespoons of olive oil until soft. Remove from the heat, and add to a food processor with 20 ounces of thawed frozen spinach, 1 chopped cooked potato, 1 cup of low-fat milk, 1 large egg and 1 egg white. Pulse for 30 seconds before adding in 2 teaspoons of Worcestershire sauce, 1 tablespoon of grated lemon zest, 1 tablespoon of dried mint, a pinch of ground cloves and 3 teaspoons of kosher salt. Season with pepper, and pulse until everything is evenly combined together.
Preheat the oven to 350 degrees Fahrenheit. Transfer the mixture into a bowl, and fold in 1 pound of extra-lean ground turkey. Scoop the meatloaf mixture into a meatloaf pan. Bake for 1 hour and 15 minutes. Remove it from the oven, and allow it to cool for 5 minutes.
Meanwhile, toss together 4 chopped plum tomatoes, 1 tablespoon of olive oil, 1 teaspoon of kosher salt and 1 tablespoon of freshly chopped parsley. Serve the tomato salad alongside slices of meatloaf.Learn more about Cooking
