An easy recipe for lima beans and ham is the old-fashioned butter beans and ham recipe from Food.com. It requires lima beans, ham, onions and garlic. Other ingredients include bay leaves, salt and pepper, butter and hot sauce. This recipe serves up to six people.
To prepare, soak 1 pound of large dried lima beans for approximately one hour. Next, fill a large saucepan half-full with water, and add the soaked lima beans. Add in one ham hock or shank and a quartered onion. Add 3 peeled garlic cloves and 2 bay leaves.
Bring the water to a boil, and then simmer uncovered for an hour. Drain, and save the broth in another bowl. Throw away the onion, bay leaves and garlic. Put the lima beans in a bowl to the side, and cut the ham into small chunks, discarding the bones.
Melt 1 tablespoon of butter in the saucepan and add 1 finely chopped onion. Sauté for five minutes. Add the chopped ham and 2 cups of the reserved liquid, and bring to a boil. Simmer uncovered for another five minutes. Add the lima beans, 1 1/2 teaspoons of hot sauce and salt and pepper. Cook for another three to five minutes.
Serve the recipe with fresh bread.
