Make lemon drop cookies by creaming together 3/4 cup of sugar and 1/2 cup of butter and beating in 1 6-ounce container of lemon yogurt, 2 eggs, 2 1/2 cups of all-purpose flour, 1 tablespoon of lemon zest, and 1/2 teaspoon each of baking soda and salt. Fold in 1 cup of white baking chips, and dollop dough balls onto a greased cookie sheet. Bake the cookies at 350 degrees Fahrenheit for seven to nine minutes. Meanwhile, whip up the frosting by combining 2 cups of powdered sugar, 3 tablespoons of softened butter, 3 tablespoons of lemon juice and 1 teaspoon of lemon zest. Once the cookies cool, frost them.
To make lemon ginger drop cookies, cream together 8 tablespoons of unsalted butter and 3/4 cup plus 2 tablespoons of sugar, and beat in 1 egg and 1 tablespoon of lemon zest. In a separate bowl, combine 1 1/3 cups of flour, 1/2 teaspoons of ground ginger, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt and 1/4 cup of diced crystallized ginger. Combine the two mixtures until just mixed, and drop spoonfuls of dough onto a cookie sheet. Bake the cookies at 350 degrees F for seven minutes, sprinkle the cookies with sugar, and bake them for seven more minutes.
