While Kentucky Fried Chicken's potato wedges are made with a secret proprietary blend of spices, a highly rated copycat recipe is available from Food.com. In addition to a deep fryer, this recipe calls for potatoes, shortening, milk, egg, flour and spices.
To make the copycat potato wedges, heat the deep fryer with shortening to 375 degrees Fahrenheit, and cut each of five baking potatoes into three to four wedges. In one bowl, mix 1 cup of milk with one egg; in another, combine 1 cup of flour, 2 tablespoons of salt and 1 teaspoon of pepper. Add 1/2 teaspoon of MSG, 1/4 teaspoon of paprika and a dash of garlic powder to the dry ingredients.
Dredge the potato wedges first in the wet mixture and then in the dry mixture. Deep-fry the potato wedges for about three minutes, remove for one minute, and then deep-fry again until cooked.
