Kentucky jam cake calls for ingredients such as butter, sugar and flour along with spices such as nutmeg, cinnamon and allspice. The cake also contains seedless blackberry jam, nuts and raisins.
To make Kentucky jam cake, grease and flour three round 8- to 9-inch cake pans. In a bowl, cream 1 cup of softened butter with 2 cups of sugar. Add 5 eggs one at a time, beating the mixture thoroughly after each egg. In a separate bowl, combine 3 cups of flour, 1 teaspoon of baking soda and 1/2 teaspoon of salt. Add the flour mixture to the egg mixture a bit at a time, and alternate with 1 cup of buttermilk a bit at a time.
Blend in 1 cup of seedless blackberry jam and 1 cup each of chopped dates or raisins and pecans. Pour the batter into the prepared pans. Bake the cakes at 325 degrees Fahrenheit for 35 to 40 minutes. Insert a toothpick into the center of each cake. If the toothpick comes out clean, remove the cake from the oven. Transfer the cakes in their pans to a wire rack, and let them cool for 15 minutes. Invert them onto the rack to finish cooling.
