Although Kellogg's does not release the recipe for its trademarked Corn Flakes cereal, the company does list the ingredients on its website. Main ingredients include milled corn, sugar and malt flavor. The cereal also includes salt and BHT as preservatives. One recipe for homemade corn flakes appears on the Always Order Dessert blog and takes approximately one hour and 10 minutes to cook.
Make homemade corn flakes by gathering 1 1/2 cups yellow cornmeal, 1 tablespoon granulated white sugar and 1 teaspoon of vanilla extract. Set aside 1/2 teaspoon of salt and 3/4 cups water. Preheat the oven to 350 degrees Fahrenheit, and line a baking sheet with foil or parchment paper. Lightly spray cooking oil on the surface of the paper or foil. Mix 1 cup of the cornmeal with the sugar and salt using a whisk, and add in water with the vanilla extract slowly until the batter has a thin consistency.
Once the batter reaches the desired consistency, pour it into the baking sheet until it's about 1/4 to 1/3 inch thick, creating one thin layer. Mix the remaining cornmeal with approximately 1 teaspoon of water to make a crumble topping. Add the topping to the baking sheet, and bake for 10 to 15 minutes on the center rack. Remove the mixture when it appears to have dried out.
Let the oven cool to 250 degrees Fahrenheit, and break up the cereal with your hands. Place the cereal back into the oven for an additional 45 minutes. Let it cool completely before serving.
