Preheat an oven to 350 degrees Fahrenheit, and then grease a baking sheet with non-stick oil spray. Add 1 1/2 cups of old-fashioned rolled or quick-cooking oats to a medium mixing bowl, along with 1/2 cup of whole-wheat flour, 1/2 cup of all-purpose flour, 1/2 cup of granulated sugar, 1 teaspoon of baking soda and 1/2 teaspoon of kosher salt. Whisk to combine, add 1/3 cup of semisweet chocolate chips and 1/2 cup of dried cherries or cranberries, and mix again.
In a separate large bowl, stir 1/2 cup of applesauce, 1 tablespoon of canola oil, 2 lightly beaten egg whites and 1 tablespoon of vanilla extract together until smooth. Add the oat and flour mixture to the liquid ingredients, and then stir until just combined. Separate the cookie dough into 1 tablespoon pieces, setting and pressing them lightly onto the baking sheet. Set in the oven, and bake for 12 to 16 minutes until the cookies appear golden brown. Allow the cookies to sit for a few minutes before transferring to a wire rack to finish cooling.
