To make cinnamon noodle kugel, preheat the oven to 350 degrees F, and cook 16 ounces of broad egg noodles according to the package instructions. Drain the noodles well, place them in a large bowl, and stir with 1/2 cup of melted margarine or butter. In a separate bowl, combine 1 cup of sugar with 1/2 teaspoon of ground nutmeg and 4 teaspoons of ground cinnamon. Add the sugar mixture to the noodles, and stir well to combine.
Separate 7 large eggs, and beat the whites until stiff. Lightly beat the yolks, and add them to the noodle mixture along with 1 1/2 cups of raisins, if desired. Pour the mixture into a greased 9-by-13-inch baking dish, and gently fold in the egg whites, keeping the mixture as fluffy as possible. Set the baking dish in the preheated oven, and bake for 40 to 45 minutes or until the top starts becoming crispy. Serve the cinnamon kugel warm or cold after allowing it to rest in the refrigerator.
