What Is a Recipe for Jello Poke Cake?

Ingredients for a Jell-O poke cake include a boxed white cake mix with the eggs, water and oil listed on the package, a small box of flavored gelatin, 1 cup of boiling water, 1/2 cup of cold water, and an 8-ounce container of frozen whipped topping that has been thawed. If desired, make homemade whipped cream by mixing 1 1/2 cups whipping cream with 2 tablespoons of sugar until stiff peaks form. Fresh fruit, such as strawberries, raspberries or bananas can be used for topping the poke cake.

Prepare the cake as directed on the package, following the directions for a 13-by-9-inch pan. Allow the baked cake to cool for 15 minutes, but do not remove it from the pan. Use a fork to poke holes into the cake at 1/2 inch intervals.

Pour the gelatin mix into a small pan, and mix with boiling water. When the gelatin is thoroughly dissolved, mix in the cool water. Pour the gelatin mixture over the cake and refrigerate for 3 hours.
