Pistachio pudding cake is a very popular desert and is made with instant pistachio Jell-O pudding mix, yellow cake mix, eggs, water, oil, almond extract, green food coloring, and powdered sugar to top it with. This type of cake is normally cooked in a Bundt pan or a tube pan, but can also be fixed in a 13-inch-by-9-inch pan for about 10 minutes less than the time used for a Bundt pan.

This cake recipe is very versatile and can work with many types of cake mix. If using a mix that has pudding already in it, reduce the water by a cup to get the right consistency.

Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Combine all of the ingredients except the sugar in a bowl and mix until blended and completely wet.
Step 3: Grease the pan being used for the recipe and pour the ingredients into the pan.
Step 4: Cook cake for approximately 50 to 55 minutes. Let cool about 10 minutes and remove from pan. Allow cake to finish cooling completely then sprinkle with the sugar just prior to serving the cake.
