A recipe for Italian-style meatloaf is Michael Chiarello's at the Food Network. This recipe combines sauteed garlic, onions and peppers with a mixture of ground beef, basil, parsley, eggs, Parmesan cheese and breadcrumbs, as well as salt and pepper. Worcestershire sauce, vinegar and olive oil are added and the loaf is shaped or packed into a pan for baking, topped with marinara sauce.
This recipe yields around 12 servings, sliced.
Prep Time: 10 minutes
Cook Time: 1 hour
Ready In: 1 hour 15 minutes
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 4 teaspoons chopped garlic
- 2 medium onions, diced
- 2 red peppers, seeded and diced small
- 1/2 cup chopped basil leaves
- 2 tablespoons chopped parsley leaves
- 4 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups grated Parmesan
- 1 1/2 cups breadcrumbs
- 3 pounds ground beef
- 2 tablespoons Worcestershire sauce
- 2 tablespoons balsamic vinegar
- 1 cup marinara sauce
- Saute vegetables
- Combine ingredients
Heat 1/4 cup of olive oil and saute the garlic for about a minute. Add the peppers and onions and continue to cook until softened, then allow to cool.
Whisk the eggs with basil and parsley, as well as the salt and pepper. Separately, combine the Parmesan cheese and breadcrumbs. With the Worcestershire sauce, remaining olive oil and balsamic vinegar, combine the meat, egg mixture, breadcrumb mixture and sauteed vegetables.
Either fill an oiled loaf pan with the meatloaf mixture or shape it on an oiled baking tray. Spread the marinara sauce over the top of the loaf and bake for up to 1 hour, or until the internal temperature reaches 160 degrees Fahrenheit. Allow to rest for 5 minutes before slicing to serve.
