Some recipe ideas for using fresh cranberries include candied cranberries; cranberry bellini, which is a drink made with juice and wine; or cranberries tossed in oatmeal along with other berries and nuts. Fresh cranberries can also be roasted with herbs and served with poultry and pork.
To make a side for poultry and pork using cranberries, combine 2 teaspoons of chopped fresh thyme, 1 tablespoon of sugar and 2 cups of cranberries. Spread the mixture on a pan, and roast at 400 degrees for 15 to 20 minutes. The cranberries can be served with roasted pecans in wild rice.
Another sweet and savory recipe is cranberry salsa served on crostini slices. In a food processor, coarsely chop 3 cups of fresh cranberries, a half cup of chopped shallots, and 1 chopped and seeded jalapeno. Mix in the juice and zest of 1 lime and 1 cup of light brown sugar. After the flavors meld together for 15 minutes, add more lime juice and cilantro. Spoon the salsa onto crostinis spread with goat cheese.
One bag of cranberries can be cooked in a saucepan at medium-high heat with 2 tablespoons of maple syrup. After eight or nine minutes, remove the cranberries from the heat, and allow them to cool before beating in 1 cup of softened butter. Refrigerate before serving on toasted bread.
