To make about 2 cups of hummus with tahini, 15 ounces of cooked chickpeas, 3 tablespoons of extra virgin olive oil and 3 tablespoons of tahini are required. In addition, a small roughly chopped clove of garlic and a half teaspoon of fine ground pepper are required.
To round out this hummus recipe, a teaspoon of salt and 1 1/2 tablespoons of lemon juice are needed. To begin, rinse the chickpeas under cool water in a strainer. If possible, remove the skins from the chickpeas, as doing so results in a smoother hummus. Throw all the ingredients into a food processor. Blend them for roughly two minutes, or until the mixture is smooth. It may be necessary to scrape down the sides of the blender, as larger chunks of chickpeas escape blending there.
Taste test the hummus, and adjust any spices if wanted. Anywhere from 1 to 3 teaspoons of cumin, paprika or sumac may be added to the mixture to add flavor. In addition, more olive oil or lemon juice can be added to the hummus to make the mixture less viscous. About 1/4 cup of olives can be added to the blender for a stronger olive flavor, while a nutty flavor can be achieved through the addition of toasted walnuts, pine nuts or almonds.
