Make rye bread by first beating 1 1/4-ounce envelope of dry yeast into a bowl with 1 tablespoon of sugar, 3 tablespoons of melted butter, 1 egg and 1 cup of warm milk. After one minute, pour in 1 cup of rye flour, 2 1/2 cups of all-purpose flour, 1 tablespoon of caraway seeds and 1 1/2 teaspoons of salt. Mix for another minute, then increase the speed to medium until the dough starts to form a ball. Finish smoothing the mixture into a ball with your hands, and place the dough in a lightly oiled bowl covered by plastic wrap. After it rests and rises for one hour, lightly knead the dough on a floured surface, place in a baking pan, and allow it to rise covered for another hour.
Beat 1 egg in a bowl, then brush it over the top of the dough. Bake at 350 degrees Fahrenheit for 45 minutes, then remove to a cooling rack. For George's recipe, add 2/3 cup of molasses and 1/4 cup of cocoa powder to the dough before allowing it to rise.Learn more about Bread
