Make a homemade meatloaf by combining ground beef with onion, white bread, eggs, ketchup and spices and then glazing it with a ketchup mixture. The recipe yields six servings and requires 15 minutes of preparation time and one hour of cooking time.
In a small bowl, whisk together 1/4 cup of ketchup, 1 tablespoon of Dijon mustard and 2 teaspoons of lightly packed brown sugar. Set this mixture aside to act as the glaze for the meatloaf. In a larger bowl, combine 2 pounds of ground beef with 1 medium, finely chopped onion, 3 tablespoons of ketchup, 2 large eggs and 1 slice of white bread that has been torn into pieces. Add one teaspoon of salt and 3/4 teaspoon of freshly ground black pepper to the meat mixture, and combine thoroughly.
Put the mixture into a 9-by-5-inch loaf pan, and bake for 30 minutes at 350 F. Remove the meatloaf from the oven, and brush it with some of the ketchup glaze. Return the meatloaf to the oven, and cook it for 30 more minutes. Then remove it, and allow it to rest for five minutes. Carefully turn the meatloaf over onto a serving platter, and spoon on the remaining glaze prior to serving.
