To make Food Network's recipe, first make the meat sauce. In a saucepan, heat 2 tablespoons oil. In a bowl, combine 1/3 pound ground beef, 1/3 pound ground veal and 1/3 pound ground pork. Season with salt and pepper. Brown the meat for four to six minutes. Add 2 cups finely chopped onions, 1/2 cup finely chopped celery and 1/2 cup finely chopped carrots. Season with salt and pepper, and add 2 tablespoons chopped garlic and 2 28-ounce cans of tomatoes. Cook, and add 1 small can tomato paste and 4 cups beef stock in addition 2 sprigs fresh thyme, 2 bay leaves, 2 teaspoons oregano, 2 teaspoons basil and a pinch of crushed red pepper. Bring to a boil, and let simmer for two hours.
To make the lasagna, in a bowl, combine 2 cups fresh ricotta, 8 ounces grated Provolone, 8 ounces grated Mozzarella and 8 ounces grated Romano. Add 1 egg, 1/4 cup milk, 1 tablespoon basil, 1 tablespoon chopped garlic, and salt and pepper. Spread 2 1/2 cups meat sauce on the bottom of a lasagna dish, followed by one-quarter of the cheese mixture, 1/4 package of dried lasagna noodles and another quarter of the cheese mixture.
