Pour the batter into muffin tins, and bake the cupcakes at 350 F for 18 to 20 minutes.
Make coconut cupcakes by combining 1 cup of all-purpose flour, 1 1/4 teaspoons of baking powder, 1/4 teaspoon of salt and 1/3 cup of sweetened shredded ground coconut in a bowl. Beat together 1/2 cup of softened unsalted butter and 3/4 cups of granulated sugar until the mixture is light in texture and color, and then mix in 1 egg, 1 egg white and 1 teaspoon of vanilla extract. Alternate between adding the flour mixture and 1/2 cup of unsweetened coconut milk to the butter mixture until the batter is well-blended. Pour the batter into muffin liners, and bake at 350 F for 18 to 20 minutes.
