To make the homemade chicken stew, heat 2 tablespoons of olive oil in a heavy saucepan over medium heat. Add two stalks of diced celery, a carrot cut up into small pieces and a small chopped onion, and saute them until the onion becomes translucent. Season with salt and pepper, and then stir in a can of chopped tomatoes with the juice, a can of low-salt chicken broth, 1/2 cup of fresh basil leaves, torn into pieces and a tablespoon of tomato paste. Add a bay leaf, 1/2 teaspoon of dried thyme and the chicken breasts.
Bring the liquid to a simmer, and then reduce the heat to medium-low and cook until the chicken is almost cooked, about 25 minutes, turning the breasts over and stirring throughout. Using tongs, discard the bay leaf and remove the chicken breasts, and then allow them to cool for about five minutes. Add a can of organic kidney beans and simmer until the liquid has reduced.
Meanwhile, remove the skin and bones from the chicken, and shred the meat into bite-size pieces. Return the chicken to the stew, bring the stew back up to a simmer, and season with salt and pepper before serving.Learn more about Cooking
