A good recipe for an herb roasted turkey consists of rubbing a turkey with olive oil and then sprinkling a mixture of herbs on the outside of the turkey. A lemon and additional herbs are placed inside the turkey during the roasting process.
Preheat the oven to 375 degrees Fahrenheit. Rinse and pat the turkey dry before rubbing the outside and inside of the turkey with 3 tablespoons of olive oil. Rub 1 teaspoon of salt and 1/2 teaspoon of black pepper onto the outside of the turkey. Place a halved lemon into the cavity of the turkey with 2 fresh rosemary sprigs, 1 fresh sage sprig, 1 fresh oregano sprig and 1 fresh thyme sprig.
Place the turkey on a roasting rack in a deep baking dish or roaster. Cut 2 carrots and 4 stalks of celery into halves and place in the roasting pan around the turkey. Cover the vegetables with 4 cups of chicken broth and insert a meat thermometer into the thigh of the turkey, being careful not to touch the bone. Roast for up to two hours or until the thermometer reaches 165 degrees Fahrenheit. Baste the turkey with pan drippings every 30 minutes.
Remove the turkey from the pan and discard the vegetables. The pan drippings are used to make gravy.
