Some healthy oatmeal muffin recipes include blueberry oatmeal muffins, maple-sweetened banana muffins and healthy baked oatmeal muffins. You need quick-cooking oats, maple syrup, eggs, flour and cinnamon.
To make blueberry oatmeal muffins, blend 1 2/3 cups of quick-cooking oats into a coarse meal, and combine them with 2/3 cup of flour, 1/2 cup of whole-wheat flour, 3/4 cup of light brown sugar, 2 teaspoons of cinnamon and 3/4 teaspoon of salt. Mix in 1 teaspoon each of baking powder and baking soda. In another bowl, whisk together 1 1/2 cups of buttermilk, 1/4 cup of canola oil, 2 teaspoons of grated lemon rind and 2 large eggs. Pour the buttermilk mixture into the flour mixture, and fold in 2 cups of frozen blueberries combined with 2 tablespoons of flour. Spoon the mixture into a muffin tin, sprinkle granulated sugar over the tops, and bake the muffins at 400 degrees Fahrenheit for 20 minutes.
Make maple-sweetened banana muffins by creaming together 1/3 cup of melted coconut oil and 1/2 cup of maple syrup, and beating in 2 eggs, 1 cups of mashed ripe bananas and 1/4 cup of milk. Mix in 1 teaspoon each of baking soda and vanilla extract and 1/2 teaspoon each of salt and cinnamon before folding in 1 3/4 cups of whole wheat flour and 1/3 cup of old-fashioned oats. Spoon the batter into a muffin tin, and sprinkle the tops with oats and turbinado sugar. Bake the muffins at 325 degrees Fahrenheit for 23 to 25 minutes.
