The cheesy ground beef and rice casserole from Oh Sweet Basil is a good recipe that is very easy to make. This hearty and simple dish calls for rice, beef, carrots, mushroom gravy and cheese.
To make cheesy ground beef and rice casserole, whisk together 2 cups of water, a 3.9 ounce container of mushroom gravy and 1/2 cup of milk in a large bowl. Add 1 cup of uncooked rice, 1 cup of sliced carrots and 1/2 pound to 1 pound of cooked ground beef to the mushroom mix. Stir to combine the ingredients, then pour the mixture into an 8-inch by 9-inch baking dish. Bake uncovered in a 350 degree Fahrenheit oven for 90 minutes. Cover the top of the casserole with sliced cheese, and continue baking until the cheese is melted.
If you do not have mushroom gravy, you can substitute 1 can of condensed cream of mushroom soup. For people who don't like mushrooms, onion gravy can be used instead. The rice can be partially cooked before putting it in the casserole to cut down on baking time. Another time-saving step is to cook the carrots partway before they are added. Spices such as garlic and pepper can be added to this dish for more flavor.
