Food Network offers a turkey meatloaf recipe by Ina Garten on FoodNetwork.com. The recipe calls for yellow onions, thyme, Worcestershire sauce, chicken stock, tomato paste and ground turkey breast, along with eggs, ketchup and bread crumbs.
Preheat an oven to 325 degrees Fahrenheit. Set a medium sauté pan over medium-low heat, add 2 tablespoons of olive oil and cook 3 cups of chopped yellow onions, 2 teaspoons of kosher salt, 1 teaspoon of freshly ground black pepper and 1 teaspoon of fresh thyme leaves. Once the onion appears translucent and not yet browned, add 1/3 cup of Worcestershire sauce, 3/4 cup of chicken stock and 1 1/2 teaspoons of tomato paste and mix well. Remove from heat and allow to cool fully.
Mix 5 pounds of ground turkey breast, 1 1/2 cups of dry breadcrumbs, 3 extra-large eggs and the onion mixture in a large bowl. Mix thoroughly and shape into a loaf on an ungreased sheet pan. Coat with 3/4 cup of ketchup, then bake for 1 1/2 hours until the internal temperature reaches 160 degrees Fahrenheit. Serve hot by slicing the meatloaf on a diagonal bias. The meatloaf can also be served at room temperature or cold on a sandwich.
