All Recipes and the Food Network provide recipes for gingerbread men. The first recipe yields two dozen cookies and the second yields two to three dozen.
For the first recipe, mix 3 cups of flour, 2 teaspoons of ginger and 1 teaspoon each of cinnamon and baking soda in a bowl. Also add 1/4 teaspoon each of salt and nutmeg. In another bowl, beat 3/4 cup of softened butter and 3/4 cup of brown sugar. Beat with an electric mixture on medium speed until light and fluffy. Mix in 1/2 cup of molasses, 1 egg and 1 teaspoon of vanilla extract.
On low speed, gradually beat in the flour mixture until well mixed. Press the dough flat and refrigerate for at least four hours. Next, preheat the oven to 350 degrees and roll the dough to one-quarter inch thickness. Cut gingerbread men shapes, placing them one inch apart on baking sheets. Bake for about 10 minutes.
For the second recipe, sift 3 1/2 cups of flour and 1 teaspoon each of baking soda, salt, and ginger. Also sift 2 teaspoons of cinnamon and 1/4 teaspoon each of cloves and allspice. In another bowl, mix 6 tablespoons of melted butter, 1 tablespoon of melted shortening, 2/3 cup of brown sugar and 3/4 cup of molasses; then beat in 1 egg.
Beat in the flour mixture in two additions. Divide the dough in half, wrapping each half in plastic. Pat to half-inch thickness and chill for two hours. Preheat the oven to 350 degrees and roll out the dough to quarter-inch thickness. Cut gingerbread men shapes and place one inch apart on a baking sheet. Bake for about 10 minutes.
