To prepare garlic shrimp, heat olive oil in high heat until it smokes, and then add the shrimp, followed by garlic and salt, after cooking for a minute. Cook for six minutes until the shrimp turns pink, and add pepper, lemon and parsley to taste. Serve while hot.
To prepare garlic shrimp for four servings, heat 1 ounce of olive oil in a skillet until it begins to smoke, then place a pound of peeled shrimp in it. Spread the shrimp evenly and cook for a minute without stirring. Season it with salt, 6 cloves of minced garlic and red pepper flakes, and stir for two minutes. Add a tablespoon of cold butter, toss it with the shrimp, and cook until all the butter melts. Cook for four to five minutes, while stirring, until the shrimp turns pink.
Use a slotted spoon to transfer the shrimp to a bowl, leaving the sauce to cook for two more minutes. Dilute the sauce by adding 1 tablespoon of water at intervals until it achieves the desired thickness. Add salt to taste. Serve the shrimp with the pan sauce, lemon wedges and a bit of parsley if desired. White rice or plain toast goes well with garlic shrimp.
