Frito corn salad is a quick, inexpensive and impressive salad that takes under 10 minutes to assemble. Start by mixing 1 tablespoon of taco seasoning with 1 cup of mayonnaise and set the mixture aside.
In a large bowl, combine 12 ounces of frozen corn kernels, thawed, 2 cups of grated sharp cheddar cheese, 1 diced green pepper and 1/2 cup of diced red onion. Stir the ingredients to combine, then add in the mayonnaise mixture. Mix the salad until all the dry ingredients are coated with the mayonnaise mixture. Crush up one 10.25-ounce bag of Fritos, retaining a handful for garnish if desired. Stir in the crushed Fritos just before serving.
The salad may be made in advance, mixing all ingredients ahead of time except the Fritos. Any flavor Fritos may be used, but original, BBQ or chili are recommended. For added spice, substitute Mexican or taco cheese for the cheddar cheese. After adding the Fritos, test the Frito corn salad and add salt and pepper to taste. Garnish the salad with a few whole Fritos.
For variations, recipe reviewers on The Country Cook website suggest adding a can of black beans, garnishing with extra cheese and sliced scallions, or adding smoked paprika for extra flavor.
This salad must be refrigerated after preparation and should not be left out for extended periods of time.
