To prepare fried potatoes and onions, cut 3 white potatoes and 1 large sweet onion into thin slices. In a skillet, heat 1 tablespoon of vegetable oil and 2 tablespoons of butter. Place potatoes and onions in the skillet, and cook for three minutes on medium high heat. Use a spatula to turn potatoes and onions; continue to cook for about 20 minutes or until potatoes and onions turn golden brown.
Additional fried potato and onion recipes include chili-fried potatoes and German-style fried potatoes. To prepare chili-fried, potatoes, cut 1 pound of unpeeled baking potatoes into cubes. Place potatoes into a steamer basket, and steam over boiling water for 10 minutes. Remove from heat when finished. Cut 1 onion into thin slices. In a skillet, heat 1/2 teaspoon of olive oil, and saute onion slices until tender. Add potatoes, and season with 1 teaspoon of chili powder and 1/4 teaspoon of salt. Cook until the potatoes start to brown. Remove from heat, and cover potatoes with 1/2 cup of shredded cheddar cheese. Allow cheese to melt before serving.
To prepare German-style fried potatoes, boil whole, unpeeled red potatoes for 25 minutes, or until tender. Wait until potatoes cool, and cut into cubes. Chop 2 red onions into small pieces. In a large skillet, heat 3 tablespoons of lard, and add the potatoes. Cook for seven minutes, or until potatoes start to brown. Add onions and 3 tablespoons of beer. Reduce heat and cook for an additional five minutes.
In the meantime, prepare a vinaigrette. Whisk together 4 1/2 tablespoons of olive oil, 1 tablespoon of Dijon mustard and 3 tablespoons of white wine vinegar. Remove fried potatoes and onion from heat, and pour the vinaigrette on top. Toss to coat, and add salt and pepper to taste.
