In a large skillet, heat 3 tablespoons of lard, and add the potatoes. Cook for seven minutes, or until potatoes start to brown. Add onions and 3 tablespoons of beer. Reduce heat and cook for an additional five minutes.
In the meantime, prepare a vinaigrette. Whisk together 4 1/2 tablespoons of olive oil, 1 tablespoon of Dijon mustard and 3 tablespoons of white wine vinegar.
