To make fresh cranberry relish, place half of a 12 ounce bag of fresh cranberries in a food processor with 1/2 of an unpeeled, seeded orange, and process the ingredients until finely chopped. Repeat with the remaining cranberries and the other half of the orange, and stir 3/4 to 1 cup of sugar into the cranberry mixture.
Alternately, place 2 pounds of fresh cranberries, 1 cup of sugar, 1/4 cup Grand Mariner liqueur, and the juice, zest and pulp of 1 orange into a food processor. Process the ingredients until the relish is the desired consistency, and pour the mixture into a bowl. Allow the relish to remain at room temperature for at least 30 minutes before serving.
Another option is to combine 1 unpeeled, seeded orange cut into 2-inch pieces with 1 peeled, cored Granny Smith apple cut into 2-inch pieces and 1/4 of a seeded, unpeeled lemon cut into 2-inch pieces. Place the apple, lemon and orange in the food processor, and process the ingredients until finely chopped.
Add 2 cups of cranberries to the food processor with the other fruit, and process the relish to coarsely chop the berries. Pour the mixture into a bowl, and add 1/2 cup of sugar and 1/2 cup chopped walnuts. Stir to combine the ingredients.
