To make flat bread without yeast, mix 5 cups of all-purpose flour, 2 tablespoons of baking powder and 1 1/4 teaspoons of salt in a large bowl until the ingredients are fully integrated. Slowly add 2 cups of milk and 1 1/2 tablespoons of melted butter, kneading the mixture until it becomes dough. Make sure the dough isn't sticky. Amend the dough with flour if it is too wet, and add more milk if the dough is too dry.
Flatten the dough, and sprinkle it with 3 teaspoons of herbs of provence and 1/2 teaspoon of garlic powder. Knead the dough until the spices evenly integrate. Let the dough rest for 8 hours or overnight, wrapped in plastic.
Divide the dough into small balls, and flatten them until they are 1/8 inch thick. Add a little olive oil to a frying pan, and heat it up. Cook the flattened dough on each side until they puff up.
Alternatively, melt 100 grams of butter in 1 1/2 cups of milk. Add 4 cups of unsifted plain flour and 1 teaspoon of salt to the milk and butter. Knead the ingredients until a smooth dough forms. Amend with extra flour if the dough is sticky.
Divide the dough into eight parts, roll them into balls, and flatten them until they are 1/4 inch thick. Add 1 tablespoon of olive oil to a pan, and heat it up over medium-high heat. Cook the flattened dough for 1 minute on each side.
