To make Emeril's Essence spice blend, mix 2 1/2 tablespoons paprika, 2 tablespoons salt and 2 tablespoons garlic powder with 1 tablespoon each of black pepper, onion powder, cayenne pepper, dried oregano and dried thyme. This recipe makes 2/3 cup of Emeril's Essence spice blend.
Use Emeril's Essence seasoning for multiple purposes, including an easy fried chicken recipe. To make the fried chicken, start by mixing 3 cups buttermilk, a 5-ounce bottle hot sauce, 1/4 cup Essence blend and 3 teaspoons salt. Toss 5 pounds of chicken wings in the buttermilk mixture, and refrigerate for at least one hour. Bring 1 quart of peanut oil up to 360 degrees Fahrenheit in a Dutch oven to prepare for frying.
After removing the chicken from the refrigerator, add eight pieces of chicken at a time to a mixture of 3 cups flour and 1/4 cup Essence seasoning in a re-sealable plastic bag. Shake the chicken in the flour until coated, then allow to sit on a wire rack for 10 to 15 minutes. Fry about 10 to 15 pieces of chicken at a time in the peanut oil for about seven to eight minutes, until golden brown. After the chicken is fried, season with more of the Essence seasoning. Keep the chicken in a 200 degree oven to keep warm until serving.
